Warm Winter Dinners

Brrr! We have quite the cold weather in the forecast for this week and next. It was my task today to come up with cozy dishes for next week's menu. There's nothing like a warm, full belly on a cold evening! Here is my lineup of winter meals for the next week, maybe it will give you some good ideas as well. 

Thursday(tomorrow)- chicken divon with broccoli and rice. A creamy, curried sauce is poured over poached chicken and broccoli and served over rice. 

Friday- homemade waffles with strawberries, cream, and warmed, pure Vermont syrup. 

Saturday- chicken a-la queen. I basically pour chicken pot pie filling over sweet potatoes and biscuits. 

Sunday- Wonton soup. Wontons cooked in a chicken broth with scallions served with fresh challah bread and cheese. 

Monday- chicken fried rice. Homemade! I fry up pre cooked rice with chopped, poached chicken, mixed veggies, onion, scallions, soy sauce, brown sugar, and toss in scrambled egg at the end. 

Tuesday- sausage tortellini soup. Ground and browned Italian sausage and cheesy tortellini simmered with chopped tomatoes in a creamy broth. 

Wednesday- thanksgiving seasoned and baked chicken served with mashed potatoes, stuffing, and green beans. 

Thursday- chicken parm. Pre cooked breaded chicken cutlets layered in a pan with fresh tomato sauce and Mozarella served over linguine. 

I'm hungry just thinking about these yummy dishes!
