heartburn for as long as I've known him.
I figured that's just how his body is
and didn't think too much of it until recently.
I noticed that his heartburn is keeping him up at night
and he has been popping tums more frequently than
I did even during my pregnancies.

because it was not long after
I made a personal resolution to help him
find relief that my good friend
told me about this great book she was reading
The Acid Reflux Solution: A Cookbook and Lifestyle Guide for Healing Heartburn.
She said that once she was finished reading
it that she would drop it off for me to look over.
I read that whole book in just a few hours
while the girls were napping
and I loved it!
It wasn't isn't of those strict books that
tells you to turn your entire lifestyle up-side-down,
stop eating all together, and empty your wallet
to purchase expensive diet foods.
It gives you a chance to look over HOW
you eat before you look at WHAT you eat.
For example: do you drink a lot of liquid
during your meal? Try saving your drinks for
before and after you eat to eliminate indigestion.
This is a tip I already learned from my pregnancies!
I don't want Peter to stress out about following a diet,
so I took notes and wrote down recipes from the
book to show him that he can still have his favorite
meals, I just need to try reducing
indigestion-causing foods and ingredients.
One great cooking tip from the book is
to make your tomato sauces with a base of
chicken stock instead of tomato puree.

I have tried out a few recipes this week
to help reduce Peter's heartburn
and this amazing recipe from the book was a
success and super delicious.
On to your recipe...
Homemade Banana Pudding
3 tbsp cornstarch
1/3 cup plus 2 tbsp sugar
3 cups milk
3 egg yolks
2 tsp vanilla extract
3 1/2 bananas, ripe, but not brown
Graham Crackers*
In a heavy saucepan, combine the cornstarch and sugar.
Whisk in the milk until blended.
Cook over medium heat, whisking often,
for about 5 minutes,
until the milk comes to a boil and thickens.
Reduce the heat to medium low and simmer for 2
minutes. Remove from heat.
In a small bowl, beat the egg yolks lightly and
gradually whisk in about 3/4 cup of the hot milk
to warm them. Whisk the egg yolks into the remaining
milk in the pan. Cook over medium heat, whisking for
1 minute. Remove from heat and scrape the custard into
a bowl. Let it cool to tepid and whisk in the vanilla.
Place a thin layer of banana slices
in the bottom of a serving bowl
and sprinkle with an even layer of
crushed Graham Crackers.
Spoon an even layer of custard on top
of the Graham cracker layer
and top that with another layer of
sliced bananas and graham crackers.
Cover and refrigerate overnight.
Garnish with whipped cream before serving.
Letting the custard cool a bit before adding the vanilla.
Banana layers on the bottom with a Graham Cracker sprinkling.
A lovely layer of the custard on top of the bananas.
A few more banana slices on top with some more
Graham Cracker sprinkles.
A little bit of whipped cream for garnishing!
These little glass bowls were perfect and
the guests loved it!
*This recipe originally called for Nilla Waffers
layered with the bananas,
but I substituted them with thin sprinkled layers
of Graham crackers to keep it gluten-reduced.
