My Sweetie Pumpkin's birthday is a week away but we celebrated yesterday. She requested a childhood favorite of the cake, Hawaiian Delight. I looked up the recipe and it didn't seem too complicated so I agreed. It came out wonderful. The birthday girl and all of the guests really enjoyed it. Here is the recipe:
Cook a yellow boxed cake in a 13x9 pan as directed on box. Top with a cream cheese icing made by mixing a 7oz tub of cool whip with an 8oz cream cheese (mix on HIGH for ~5 minutes). On top of this, coat with 1 box of instant vanilla pudding (not the powder, make it into pudding first). Then, top with one can of crushed pineapple which has been drained and squeezed of all liquid. Finally, top it off with flaky cocunut and halved maraschino cherries.
