Mixed Berry Jam Goodness

With our new garden providing fresh produce left and right we decided to try making a jam before the berries went to the birds. With a long distance trip coming up I haven't had much time to do chores let alone baking. It was awesome that Peter found an instant pectin to make 30 minute freezer jam! We picked 3 cups of black raspberries yesterday and Peter and the girls picked 2 more cups today. I threw in 3 cups of fresh strawberries (including our own harvest) plus 1 cup of fresh cherries and voila! Mixed berry jam!

5 cups of black raspberries, yum!

1 cup of fresh cherries for a flavor kick. 

3 cups fresh strawberries. 

I used my immersion blender to purée the berries. 

Mixed the sugar and pectin together. 

Mixed the sugar/pectin with the berries and stirred for 3 minutes. 

Poured the berry mixture into washed jars, leaving 1/4 inch at the tops for expansion during freezing. 

We washed the rims and sealed the jars (we added fabric labeled with the contents and date to the tops for a pretty touch). 

We used The Ball recipe under the label for our jam. We measured how much puréed berries we had and then adjusted the recipe accordingly. We ended up with 8 1/2 jars of mixed berry jam! 

Now I'm looking forward to my blueberry harvest this week!
