I've finally found a great way to use up old bananas
And eat something gluten free that tastes yummy.
Easy Banana Cookies
2 bananas
1 cup oatmeal
1/2 tsp Apple pie spice
1 tbsp brown sugar
Preheat oven to 350*. In a medium bowl, mash the bananas and mix in the oatmeal, apple pie spice, and brown sugar. Drop by teaspoonful onto a baking sheet and bake for 15 minutes. Let cookies rest for 5 minutes before moving them to a cooling rack.
These taste delish warm or cold. They are great for grabbing on-the-go and since they are so simple, I don't mind giving them to the baby for breakfast!
