Gluten-Free Oatmeal Cookies

I must have eaten half-a-dozen of these yesterday
they are SO delicious! 

Gluten-free Oatmeal Cookies
A very happy mixture of goodness!

1/2 butter, softened
1/2 cup brown sugar, packed
1/4 cup white sugar
1 egg
1/2 tsp gluten-free vanilla
3/4 cup Namaste Perfect Flour Blend
1/2 tsp baking soda
1 1/2 cup gluten-free oats
1/2 tsp cinnamon
1/4 tsp salt
1 cup raisins
1/2 cup nuts

Directions

Cream together butter and sugars. Add egg and vanilla and
mix until smooth. In a separate bowl, whisk together dry ingredients.
Add dry mix into the wet mix and stir thoroughly.
Drop by rounded tablespoonfuls onto  a lightly greased
cookie sheet.
Bake at 350* for 10 minutes. Let cookies cool for 5 minutes before moving to
 a wire rack.
These are amazing!
     I can't believe these are gluten free! I am definitely making them again. The Perfect Flour Blend has worked out nicely for us so far. We are still buying potato starch to use for certain recipes that I can have. Peter is allergic to potatoes, I can't use a blend with potato starch/flour, but it is good to use in some recipes as we have found that tapioca starch/flour makes things gummy in texture.
