GLUTEN FREE Banana Bread



Here is a great recipe that I got from my mum!
In my recent gluten-reduced meal quest,
I have been substituting my favorite recipes
using THIS GLUTEN-FREE ALL-PURPOSE FLOUR.

So far we have found that it works great for
thickening our usual sauces, this banana bread, and
a recommended bread recipe (check for my other gluten-free posts!) found on the label
of the gluten-free flour package.



Gluten-Free Banana Bread




1 loaf or 12 muffins



*2 Bananas, smashed
*1/4 cup applesauce
*1 cup white sugar
*1/2 cup butter, softened
*1/4 cup milk
*2 eggs
*1 Tsp vanilla
*2 cups flour *Gluten-free all-purpose flour
*1 tsp baking soda
*1/2 tsp salt


Directions

Preheat oven to 360*
In a medium bowl, cream together the softened butter, bananas, sugar, and applesauce.
Mix in milk, vanilla, and eggs until smooth.
Add the flour, baking soda, and salt and mix just until combined.

Pour batter into a greased loaf pan or greased cupcake tins.
Bake for 50-60 minutes for a loaf or 25-30 minutes for muffins.
Loaf and muffins are ready when an inserted toothpick pulls out clean.

Cool loaf/muffins for 15 minutes on a wire rack before losening
and removing from pans. Serve warm.


*We love ours with cream cheese and butter! You can also add
1/4 cup raisins, chopped nuts, or flax meal to the batter for an extra kick!
