Easy Creamy Rice Pudding

Every time I make a batch if this, half of it is gone within ten minutes!
This has been my favorite GLUTEN FREE snack for the past two months. 

Easy Creamy Rice Pudding

  • 2 cups milk
  • 1/3 cup white sugar
  • 1/4 teaspoon salt 
  • 1 egg, beaten
  • dash of nutmeg
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract 

Directions

Place the rice, water, and tablespoon of butter in a medium sauce pan on medium heat and bring to a boil. Reduce pan to low heat and cover for 15 minutes.  Add 1 1/2 cups of the milk, sugar, and salt. Simmer and stir until mixture is creamy and thick (about 10 minutes). Add remaining 1/2 cup milk and egg and cook for 2 more minutes, stirring constantly.  Remove from heat and stir in nutmeg, butter, and vanilla.
