Spinach Quiche



Here is a great recipe I adapted from Allrecipes.com
to suit my pantry. We LOVED it!

Spinach Quiche

1/2 cup butter
1/2 small onion
1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
1 (8 oz.)  pkg. shredded cheddar cheese
1/4 cup smoked Gouda
salt and pepper to taste
4 eggs, beaten
1 cup half&half
Parmesan Cheese
1 (9 inch) unbaked deep dish pie crust


Directions:

Preheat oven to 375*.
In a medium skillet, melt butter and saute
onion until browned. Stir in spinach and cheeses.
In a medium bowl, whisk together eggs and milk. Pour into
spinach mixture and combine. Season with salt and pepper.
Pour mixture into pie crust.
*I placed pie crust on a baking sheet to prevent drippings
in the oven*
Sprinkle top with more Parmesan cheese and bake for 50 minutes
(or until middle is set and top is golden).
Allow quiche to cool for 10 minutes before serving.
