We were recently invited to a
Salsa themed dinner party
at a friend's casa
and were asked to bring
a complimenting side for the main dish.
Having no experience with this
realm of the table
(besides taco salads and wraps)
I decided to ask my
sister-in-law, Esther.
She gave a few great suggestions
for a dish and we decided
to try the one that sounded the most colorful
and flavorful:
Cilantro Lime Rice
1) Prepare your desired serving of
white rice in either rice cooker
or stove top.
(we made ours stove top)
*Make sure the rice is nice and loose,
not thick and sticky like an Oriental dish.
You can achieve this by adding extra water to
your batch and turning off your burner
a minute or two sooner
than the recommended cook time.
2) Once rice is finished cooking,
remove from heat and add
1/3 cup of finely chopped cilantro
(no stems)
We used our mortar and pestle
to make a smooth texture.
3) Add 2 tablespoons of fresh lime
juice and the zest of one lime.
4) Mix together (with salt for seasoning)
and garnish with lime slices and
sprigs of cilantro.
Serve Warm.
We LOVED how aromatic
this side dish was!
