Here is a mouth-watering
recipe for one of my
favorite desserts!
These bad boys were fun and
easy to make
and even easier to clean up after!
If Hannah from
hadn't shared her find of silicone baking cups
at the Dollar Tree ($1 for 6),
I never could have pulled off making
this recipe without a huge mess
and cleanup!
Seriously,
the cupcakes popped
easily out of the silicone cups~
and then washing them
was just a matter of a little rinsing with
soap and water!

PINEAPPLE UP-SIDE-DOWN CUPCAKES
Ingredients:
1 cake mix (I used yellow)
1 stick of melted butter
1 cup brown sugar
2 jars of maraschino cherries
2 cups crushed pineapple (drained)
1 cup coconut flakes
Directions:
Prepare cake mix according to box directions and set aside.
Preheat your oven according to the box directions
for cupcake pans.
*Here I placed the wonderful silicone cups
in my cupcake molds, and set the oven
according to "non-stick cupcake pans". *
+If you are making this recipe without silicone cups,
DO NOT use paper cup wrappers!
Make sure that your grease your pans thoroughly for use!+
Drizzle the melted butter in each cup~ enough to cover the bottoms.
Spread about 1 tsp of the brown sugar over the butter in the cups.
Next place a yummy cherry in the center of each cup
on top of the butter-brown sugar mixture.

Spread some of the crushed pineapple around the cherries.
Spoon a generous dollop of cake batter into each cup
over the fruit (about 3/4 of the cup).
Bake according to the cake directions;
until golden, and a toothpick comes out clean...
though don't stab too hard with the toothpicks or you
will lance those yummy cherries!
Let the pan cool for about 10 minutes before
removing the cupcakes and setting them on a wire rack.
Cool thoroughly before removing the cupcakes
from the pan or silicone cups.
To remove cupcakes from silicone cups,
simply flip them up-side-down
over desired serving tray
and gently push the bottom of
the cup towards the tray while pulling the sides...
They will slide out of the cups without
much mess (some juices may be left behind).
For a bit of a garnish,
sprinkle some of the coconut flakes
over each cupcake.
