Hey All!
Here is a great recipe that I love because it is easy and my husband loves because it includes 3 of his favorite ingredients:
Cheddar Cheese,
Parmasean Cheese,
and
CHEEZITS.
That's sounds like a lot of cheese flavor huh? The flavor can be a little strong, but it blends great with simple buttered mashed potatoes and soft green beans!
First, I must make known my regrets at not being able to make this dish more often, but you see, my husband loves Cheezits SO much that it is a rare occasion for me to grab a few cup fulls to crush into a crust before he can gobble them up... and even then he is eating off the toppings before I can get the dishes to the table!
Cheezit Chicken
The great thing about this recipe is that you can just throw the ingredients on top and toss it in the oven (gently of course).
Preheat oven to 350*
I used boneless-skinless chicken breasts for my recipe.
First I rinsed off the meat and patted it dry with paper towels.
Next I placed the meat in a sprayed baking dish (spraying with cooking spray always helps with washing dishes later).
Then I lightly seasoned the chicken with salt and pepper and heavily coated it with the Parmesan cheese and crushed Cheezits (which includes that cheddar flavor).
I added water to the bottom of the baking dish (enough to cover the bottom).
Before tossing the dish into the oven, I gave the chicken a light coat of the cooking spray (this time to help with making a crunchy, golden crust).
I cooked the chicken for about an hour (internal temperature of 175*). Just remember that if you are using a different cut of meat your cook-time will be different!
I then removed the chicken from the oven and let it rest for about 10 minuted before serving and cutting (this seals in those juices, yum!).
As I mentioned before, this dish has a strong cheddar flavor, and is best complimented by lightly flavored sides such as mashed potatoes and green beans. Oh, and don't forget some wine! We used Manischewitz... a sweet, red grape wine that pairs well with cheddar... in my humble opinion anyways. :)
