Here is a childhood favorite that my Mum makes. I love loading the pizza with my favorite toppings... it is a great way to use up those refrigerator leftovers too! The dough can be split into little pizzas for personal pies, or you can only put certain topping on one half of the pizza... as what I did for ours.
Deep-Dish Pizza Crust
1 packet of dry yeast (or 2 1/4 tsp.) room temperature
1 cup warm water
1 tsp. sugar
1 tsp. salt
2 tsp. veg. oil
2 1/2 cups flour
Preheat oven to 425*
Dissolve yeast in warm water. Add the sugar, salt, and oil and mix together. Slowly add the flour and mix well. Beat dough for 30 seconds and let it rest for 5 minutes. Press dough into a deep-dish casserole. 8x10 works best if you want a nice, thick deep-dish crust. I used a baking sheet because I know my hubby loves his thin and crispy Italian crust.
After you have the dough all set in the pan it is time to have some fun! I usually start off with some tomato or white sauce on the bottom, then layer with veggies, pepperoni, maybe hamburg, and then top it all off with some fresh Mozzarella and a generous dusting of Parmesan (on Peter's half). Throw in the oven (not too hard...you don't want to loose those toppings!) for 25 minutes or until the crust is golden, sauce is sizzling, and the cheese is a molten concoction of ooey goodness. (BTW my husband LOVES my descriptions)

This is usually our "date-night" meal choice and goes well with beer or red wine, a good movie, and a snugly blanket. There is nothing more romantic than sharing a pizza pie with your darling!
