Hello All!
Here is a great dish that I like to prepare when I find myself in the middle of a "same-as -the-last-couple-of-weeks" dinner menu. It has such a unique yet appealing flavor that inspires adventure for future meal planning. My husband gave this one 5 stars!
Pork Empinadas
Rolled, flattened, and quartered dough (I used Bisquick)
Salt
1/2 lb. pork (ground, chopped, or cubed)
2 tbsp. olive oil
1 cup chopped onion
1 clove minced garlic
4 shiitake mushrooms, chopped
1/2 tsp. ground coriander
2 tbsp. sherry
1/2 tsp. soy sauce
2 tsp. sugar
1 tsp. cornstarch
1/4 cup chopped golden raisins
Heat large frying pan on medium-high and sprinkle with salt. Add pork, brown, and move cooked pork to a bowl. Reduce pan to medium heat.
Add olive oil to pan and cook onions until translucent. Add garlic and mushrooms and cook for a few minutes. Add coriander, cooked pork, raisins, sherry, soy sauce, sugar, and corn starch. Mix well.
Remove from heat and add a large amount of mixture to middle of dough quarters. Fold dough over mixture to form pockets (kind of like diapers...haha!). Make sure to pinch the edges of the pocket ends to ensure a good seal and to prevent juice leakage. Place pockets on a sprayed baking skeet and brush the tops with beaten egg. Bake for 20 minutes at 375* until golden. Serve with rice!
