Gluten-free Delicious Cookies!

Hey all!

   Here is a great recipe for gluten-free cookies that I just made that are out of this world! I loved just eating the batter by itself. :)




Gluten-Free Cookie Mix with Tasty Surprises

1 box King Arthur Flour gluten-free cookie mix (just brown sugar cookie base)
1/2 cup softened butter
1 large egg (I used two medium)
2 tbsp. water
 1-3 cups of your favorite cookie add-ins  (I used a dried mix of raisins, cranberries, blueberries, and cherries, as well as shredded coconut and chocolate chips)

1. Preheat oven to 350*
2. Put half the cookie mix and butter in a medium bowl and beat. Add the egg and water and beat until fluffy.
3. Beat in the remaining cookie mix and your desired add-ins.
4. Drop by tablespoonfuls onto ungreased cookie sheet, leaving 2" between cookies.
5. Bake for 10-12 minutes until just browned.
6. Remove from oven and let the cookies cool for 5 minutes on the pan before transferring them to a cookie sheet to cool completely (or you can just eat them off the rack while they are still warm and gooey).

   For the first batch I didn't add anything extra to the batter (plain cookies for Sunny), for the second I added just the fruit (for the health-conscious), and for the third I added the fruit with the coconut and chocolate chips (for us less health-conscious people).   Sunny LOVES the plain cookies and a good friend helped me taste the others... we decided that the fully loaded ones are the best. We want to try eating just the dough sometime (it is so tasty!). Who says you can't have fun with a gluten-free diet?!
