My little Sunny is going on 8 months old and LOVES to eat! I was reminded of this as I reached into the fridge for a jar of baby food and realized that I was out... time to make some more!
Home Made Sweet Potato Baby Food
3 medium sweet potatoes
3 empty and clean baby food jars or ice cube tray
1 pot
1 medium bowl
fork, spoon, serving spoon with slots for draining, and paring knife
First peel the sweet potatoes and then cube them. Rinse them well, place in pot, and fill with *filtered water (about 2-3 cups). Boil and keep covered until sweet potatoes are tender (about 15-20 minutes). You may add more filtered water if some evaporates. Remove cooked sweet potatoes and set aside until cooled down a bit. Use serving spoon to remove sweet potatoes from pot and into bowl. Mash potatoes with the fork and then use the spoon to ladle into jars. (Make sure not to over-fill jars if you plan on freezing them or they will expand and explode!) Once the baby food has cooled you can seal the jars and put in freezer or fridge (depending on how soon you will use them). For ice cube trays, fill each cube with baby food and then cover the whole tray with plastic wrap and use a large rubber band to keep it sealed.
Sunny loves sweet potatoes and will definitely enjoy this special batch made with love!

* I use filtered water to boil my fruits and veggies and then strain and pour the liquids into a pitcher for instant juice. It is actually quite good and super healthy!
