Fried Chicken With Green Bean Fries

Hello All! 


    Even though we are on vacation, we wanted to share this tasty dinner with you! My husband makes a "kickin fried chicken" and I added a healthy touch with my side of seasoned green bean fries...


Peter's Fried Chicken

Ingredients:
Chicken Strips
Salt
Vegetable Oil
Flour
Seasoned Bread Crumbs
3 Eggs (beaten)


   First off, trim and rinse the chicken strips. Next pat them dry with paper towels, season with salt, and set aside for 5 minutes. Then dip in beaten eggs and let drip off as much access egg as possible before coating with seasoned breadcrumbs. Let coated chicken set again for 5 minutes. Fry your chicken in preheated pan (medium heat) with 1/4 " vegetable oil. Do not turn over chicken until you can see it is golden on the sides. Once both sides are golden remove from pan and place on a plate with paper towels (to catch access grease) and place another paper towel on top.            




Seasoned Green Bean Fries


Ingredients:
Fresh Green Beans
Olive Oil
Salt + Pepper
Onion Powder
Garlic Salt
Grated Parmesan Cheese

Preheat Oven to 425*


     First trim and wash you green beans. Next place them on a broiling pan in an even layer. Coat with olive oil and sprinkle the beans with all of your seasonings. Give the beans a final toss in the pan before placing in the oven.  After 10-15 minutes flip over the beans and cook on the other side. Once tops of beans are nice and golden take them out and place on plate with paper towel to remove access grease. 


 *Note: We have discovered that different types of green beans vary in cook time. For cooking a crisper bean you will want to cook them lower and slower to help break down the tough texture so you don't end up with a chewy-fiber fry.
