Hey All!
Usually for my husband's birthday I bake his favorite Funfetti cake with either two layers or cupcakes. This year, however, he asked for a strawberry cake with a layer of strawberry-banana in the middle! I love trying new recipes so this was fun to put together!
First I baked two layers of strawberry cake. Once they were cooled I trimmed the rounded tops to make them flat for stacking. Next I whipped up some banana pudding and chilled it for a few hours along with thawing a bag of frozen strawberries. Once those were ready I placed the first layer of cake on a plate. Then I layered some thawed strawberries on top of the first layer. After that I spooned banana pudding in the middle of the cake (I didn't want the pudding to run down the sides, so by placing it in the middle it will even out a bit but not get so messy!). I then placed the second layer on top and slathered it with vanilla icing and topped it with a few strawberries and sprinkles.
(My husband just arrived home from work and I showed him the cake... it not only got his approval, but a hearty kiss! :) HAPPY BIRTHDAY SWEETIE!!!

*Next time I will use fresh strawberries so that the juices don't run over the icing!
